Mini Chocolate Chip Muffins

Mini chocolate chip muffins are moist little bites sized muffins that are loaded with chocolate flavor. Skip the bakery in the morning and make your own mini muffins at home to enjoy for breakfast or as an afternoon snack.

These mini muffins are like regular-sized muffins that you would find at a bakery but in a bite-sized form. These poppable minis make for a great grab and go breakfast idea or a perfect snack in the afternoon.

Why You Will Love These Mini Muffins

When my kids were little and in school, they loved those little bites from Entenmann's. But these can become costly so I decided to start making my own mini muffins for the kids to enjoy.

These delicious muffins could be enjoyed for breakfast, in their lunch box, or for snack time. Not to mention these little muffins could be made at a fraction of the cost of the Entemann's.

Mini chocolate chip muffins are an easy recipe to make using basic ingredients. They are moist mini muffins that are loaded with semi-sweet chocolate chips.

It takes less than 30 minutes to make these delicious muffins and you end up with 37 mini bites to enjoy.

How To Make

This mini muffin recipe is easy to make using basic baking supplies. Using a mini muffin tin I lined it with mini cupcake liners. Or you could spray with cooking spray to help the muffins from sticking to the mini muffin pan.

To create an even bake for these mini muffins I suggest preheating the oven to 375 degrees. Using a stand mixer or hand held mixer to mix the muffin batter with is helpful. You can mix the batter by hand as well.

Like with all baking I like to sift the flour. So into a medium mixing bowl, I sifted the all purpose flour, baking powder, and salt together. For this recipe, I did sift the white sugar only because I had some larger lumps of sugar. But you could simply whisk the sugar into the dry ingredients.

For the wet ingredients combine the vegetable oil, milk, large egg, and vanilla extract together in a large bowl or the bowl of a stand mixer. Once the wet ingredients are combined slowly add in the flour mixture.

With all the ingredients combined fold in the mini chocolate chips using a rubber spatula. Scoop the muffin batter out into the prepared mini muffin pan. I like to use a small cookie scoop but filling the liners up to slightly less than ¾'s full will work as well.

Bake the chocolate chip muffin recipe in a preheated oven for 12-14 minutes or until the center of the muffin is done. Use a toothpick to check the center of a muffin to see if it's done. Let the mini muffins cool for 2 minutes in the muffin tin then place the mini muffins on a cooling rack to completely cool.

Tips And Variations

When it comes to the milk and egg I find that having them at room temperature helps these to bake up light with a fluffy texture. Baking this mini muffins recipe in the center of the oven will also help them to bake more evenly.

I like to line my mini-muffin pan with mini paper liners so the muffins don't stick. Of course, the cooking spray will also help the mini muffins from sticking.

To change up the flavor of these mini chocolate chip muffins you could use white chocolate chip or even butterscotch chip would be a great variation. Regular size chocolate chips would also work in these mini muffins.

Sprinkle a bit of raw sugar on the tops of the muffins for added texture. Or add a few more mini chocolate chips to the tops of each muffin once they come out of the oven.

These little muffins are best stored in an airtight container for 4-5 days. These mini chocolate chip muffins go great with a cup of coffee in the morning. I like to pop one or two in the microwave to warm them up a bit. They can also be warmed in a toaster oven. These muffins can also be frozen for up to three months in an airtight container.

Mini Chocolate Chip Muffins

A moist little muffin full of chocolate flavor, these mini chocolate chip muffins are the perfect treat for any chocolate lover. To enjoy for breakfast or as an afternoon snack, skip the bakery in the morning and make your own mini muffins at home. These muffins are loaded with chocolate flavor in a bite sized form.

Ingredients

  • 2 Cups All Purpose Flour sifted
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • ¾ Cup Granulated Sugar
  • ⅓ Cup Vegetable Oil
  • 1 Cup Milk
  • 1 Large Egg
  • 1 Teaspoon Pure Vanilla Extract
  • 1¼ Cup Mini Chocolate Chips

Instructions

  1. Preheat oven to 375 degrees. Line muffin pan with muffin liners or spray with cooking spray. Set a side.

  2. In a medium mixing bowl sift together the flour, baking powder, and salt.

  3. Whisk or sift the sugar into the flour mixture until combined.

  4. Into a large mixing bowl or the bowl of the stand mixer add in the oil, milk, egg, and vanilla extract

  5. Slowly add the dry ingredients into the wet ingredients until combined.

  6. Using a rubber spatula fold in the chocolate chips.

  7. Using a small 1 inch cookie scoop or 1 tablespoon, fill the muffin liners with the muffin batter.

  8. Bake in the preheated 375 degree oven for 12-14 minutes. Let muffins cool in the muffin pan for 2 minutes then place onto a cooling rack.

  9. Store in an airtight container
