All the ingredients needed to make these cream cheese and cucumber sandwiches.

Here is the list of ingredients needed to make these cream cheese cucumber sandwiches.

  • Cream Cheese offers that rich creamy texture with a bit of tangy flavor that complements the cucumbers. Greek yogurt or ricotta cheese would work in replacement of the cream cheese. You could also use chive cream cheese in replacement of the cream cheese and fresh chives.
  • Mayonnaise brings a smooth creamy texture that combines with the cream cheese. Mayo can be replaced with sour cream or again Greek yogurt. You could also use our homemade avocado oil mayo.
  • Fresh Dill adds a slightly tangy note of herbal freshness to these easy cucumber sandwiches. You can replace the fresh dill with any other dried or fresh herbs
  • Fresh Chives brings a mild onion flavor to the sandwiches. Not an onion fan you can leave this fresh herb out. Onion powder will also give you that onion flavor or even use white or red onion in replacement of the chives.
  • Garlic Powder adds a savory slightly pungent flavor which enhances the overall taste of these dainty little sandwiches.
  • Black Pepper adds a bit of heat to the cream cheese cucumber sandwiches which will enhance the overall flavor. You can skip the pepper if you like.
  • Salt also acts as a flavor enhancer, I like to use pink Himalayan salt but regular table salt will work. You could also replace the salt with celery salt or even replace both the salt and garlic powder by using garlic salt.
  • English cucumber adds that layer of crunch that you expect from a cucumber. Along with a mild flavor, they also provide a bit of moisture, which balances with the cream cheese. Regular cucumbers will work, you could also try radishes for a peppery crunch flavor.
  • Bread is the foundation of these sandwiches, the choice is yours as to what you prefer to use. I used whole grain bread, pumpernickel bread, rye bread, or even use lettuce leaves. Our bread machine French Bread would also be a great foundation for these tea sandwiches.

How To Make

A bowl filled with cream cheese and mayo that has been blended together with the seasoning on top.

To make these easy cucumber cream cheese sandwiches we will start by making the cream cheese filling. Into a small bowl add in the room temperature cream cheese and mayonnaise. Blend with a hand mixer until combined and smooth. Mix in the fresh dill, fresh chives, garlic powder, black pepper, and salt.

Remove the crust from the bread then spread the cream cheese mixture onto the slices of bread. Thinly slice the English cucumber and dab the excess moisture from the cucumber slices using paper towels. Add the thin slices of the fresh cucumbers on top of the flavored cream cheese

Add the top slice of bread to each sandwich and cut each sandwich into thirds or desired size and shape.

Cucumber Cream Cheese Sandwiches

These cucumber cream cheese sandwiches are a simple and easy recipe perfect fro lunch or as an appetizer.

Ingredients

  • 4 Ounces Cream Cheese at room temperature
  • 2 Tablespoons Mayonnaise
  • 1 Teaspoon Fresh Dill
  • 1 Teaspoon Fresh Chives chopped
  • ⅛ Teaspoon Garlic Powder
  • ⅛ Teaspoon Black pepper or to taste
  • ⅛ Teaspoon Salt or to taste
  • ½ Large English Cucumber thinly sliced, dab with paper towel to remove any excess moisture.
  • 8 slices Bread remove crust (I used whole grain bread)

Instructions

  1. In a small bowl mix together the room temperature cream cheese and mayonnaise until smooth. A handheld mixer makes this easy work. Mix in the garlic powder, salt, black pepper, fresh dill, and fresh chives.

  2. Spread the cream cheese mixture onto one side of each slice of the crustless bread.

  3. Layer the sliced cucumbers onto the cream cheese mixture.

  4. Place the top bread slices and cut the sandwiches into desired size.

  5. Cut into thirds or into your desired size and shape.

  6. Serve and enjoy or store in an airtight container in the refrigerator for up to 24 hours before serving.

Recipe Notes

If you feel there is too much filling on the sandwiches you can always use more bread and slice more cucumbers. To make more cream cheese cucumber sandwiches to serve.
