Summertime means a lot of quick and easy salad recipes that are perfect for cookouts. Last week we shared one of our favorite recipes for Italian Pasta Salad.

This week we wanted to share with you all a simple yet healthy summer salad recipe. What's better than a healthy fruit salad recipe. I can almost guarantee this recipe will be a hit, I mean who doesn't like fruit?
How To Make Honey Lime Dressing
Let's start with the dressing for this salad. It's simple and naturally sweet. Made with honey, freshly squeezed lime juice, and a little bit of lime zest.
I like to offer different options to recipes whenever I can and this one is one of these recipes that can be changed up. Instead of lime juice, you could use lemon juice as well as the zest.
The lime will offer more of a bitter-sour flavor whereas a lemon would offer more of a sweet-sour flavor. I felt with all the natural sweetness from the fruit as well as the honey it would be best to use a lime.
The honey will add natural sweetness to this salad and really make this fruit salad shine. The honey will also help to calm the bitter-sourness of the lime juice down.

The fresh honey-lime dressing helps to keep the fruit salad from turning brown as well. While adding an enjoyable bittersweet flavor to the fresh fruit.
Another great thing about this fruit salad is that you can use whatever type of fruit you choose. These are the fruits I decided to use.
Rainbow Fruit
Blackberries ~ I love the sweet yet slightly tartness blackberries have. They don't last long in our fridge because they are so good. The dark purplish color they add to the salad is beautiful.
After all, part of enjoying food is the color food brings to dishes.
Strawberries ~ Bring a beautiful deep red color and a sweet mildly acid flavor to them. I feel strawberries complement other fruits well.
Watermelon ~ watermelon has a refreshingly delicate flavor and is a good source of many vitamins. The watermelon will start to become juicy which adds to the dressing of this fruit salad.
Cantaloupe ~ Cantaloupe is juicy, sweet, and tender. When picking out a canteloupe you need to smell it to see if it's ripe. It will have a floral musky like aroma.
Blueberries ~ Blueberries are slightly sweet with a bit of acid as well. I just love these little pops of goodness in recipes.

Pineapple ~ Nothing beats the sweet taste of pineapple, that's why it needed to be in this Fruit Salad recipe.
Did you know that by smelling the bottom of the pineapple, if it smells sweet its ripe? If the smell is pungent or bitter it can be overripe.
Also, the skin of the pineapple should be turning yellow and the skin will give a little when you press on it.
Kiwis ~ Kiwis are tart but yet sweet and are delightfully refreshing. To find the perfect Kiwi you will need to press on it. If it feels fairly soft then it's perfect. The firm ones will be more on the sour side.
Apple ~ Apples bring crispiness to the salad. Depending on which brand of apples you buy will depend on the flavor. One of my all-time favorite apples is red delicious.

Honey Lime Rainbow Fruit Salad
A delightful Fruit Salad Recipe with a simple honey-lime dressing. Made with an abundant amount of fresh sweet fruit. Coated with a honey-lime dressing.
Ingredients
- 1 Pound Watermelon Cut into Bitesize Pieces
- 12 Ounces Blackberries Washed
- 1 Pint Strawberries Washed and stems removed
- 1 Pound Cantaloupe Cut into Bitesize Pieces
- 2 Kiwis Peeled and slice into Bitesize Pieces
- 2 Medium-Sized Apples Washed and cut into Bitesize Pieces
- 1 Pint Blueberries Washed
- 2 Cups Pineapple Cut into Bitesize Pieces
For The Dressing
- ¼ Cup Honey
- 1 ½ Tablespoon Lime Juice Freshly squeezed
- 2 Teaspoons Lime Zest
Instructions

In a large bowl add all the prepared fruit.

In a small bowl add the honey, lime juice, and lime zest. Mix together

Pour dressing over the fresh cut fruit and mix together until the fruit is covered in the dressing.

Refrigerate in a covered bowl after serving.
