  • boneless skinless chicken breast is the main protein for this dish. Boneless chicken thighs will work as a juicer and a more flavorful option. I like to cut the boneless skinless chicken breasts into bite-sized cubes but you could just add the whole chicken breast and shred it once it's fully cooked.
  • small potatoes bring substance to the casserole. Red potatoes, Yukon gold potatoes, baby potatoes, or sweet potatoes would all work. Or cauliflower florets could be used instead of the potatoes. Cut these into bite-sized cubes as well.
  • black pepper enhances the overall flavor profile.
  • garlic powder adds a savory flavor, garlic salt would also work.
  • onion powder enhances the savory flavor onion salt could be used.
  • paprika provides a subtle smoky flavor and adds a dash of color to the dish. Of course, this is optional and doesn't have to be added.
  • Italian Seasoning helps to enhance the overall flavor profile as well. We have a great homemade Italian seasoning recipe that goes perfectly in this casserole.
  • minced garlic brings that fresh garlic flavor and aroma.

Helpful Tips And Tricks

In this section, you will find a collection of useful tips and tricks to help make making this recipe simple.

Depending on the size of your potatoes, they may need additional cooking time in the crockpot. I like using small or baby potatoes when making this recipe, I still slice them in half. You can use whatever potatoes you have on hand.

Since all crackpots cook differently just like ovens. You may need to adjust the cooking time according to yours. You want to make sure the chicken is fully cooked and the potatoes are fork tender.

When it comes to the seasonings used, I did use exact measurements. But you can always eyeball it to adjust to your taste preference. Try adding in some of your favorite seasonings as well. Adding in some fresh sliced onions, green onions, or even some bell peppers for added flavor would make this crock pot chicken recipe even better.

When it comes to the parmesan cheese sauce I used Buffalo Wild Wings. You can use your favorite or make a homemade version. You can also adjust the amount of sauce used to your liking.

Store any leftovers in an airtight container for 3-4 days or store in the freezer for up to 3 months. This potato casserole recipe can be made in the Instant Pot for about 8-10 minutes or until the chicken is tender.
