When life gets busy I seem to turn more toward crockpot recipes for an easy dinner idea. This slow cooker chicken and dressing recipe is always a hit at our dinner table whenever I make it. It's kind of like enjoying Thanksgiving dinner in the middle of the week it's just missing the cranberry sauce.
Crockpot chicken and stuffing casserole is made with a few simple ingredients and only requires a few minutes of prep time. I like to start by spraying the inside of my crockpot with non-stick cooking spray.
Patting the boneless skinless chicken breasts with a paper towel to remove any extra juices. Then season the chicken breast with a blend of black pepper and Italian seasonings. I like to use the Good seasons Italian dressing mix, it brings such a nice flavor to the chicken. Once the chicken is seasoned on both sides, place the chicken breast into the crockpot.

To make the soup mixture in a mixing bowl combine sour cream, cream of chicken soup, and chicken broth. Add in the boxed stuffing crumbs until the stuffing is completely covered with the soup mixture.
Place the creamy sauce on top of the chicken breasts, making sure all the chicken is covered with the stuffing recipe. Place the lid on the slow cooker and set it for 4-5 hours on high or 6-7 hours on low. Or until the internal temperature of the chicken reaches 165℉.

Depending on whether you like white meat or dark meat when it comes to the chicken. Change the chicken breast for skinless chicken thighs or change the meat to turkey.
When it comes to the stuffing recipe I like to use stove top stuffing in the savory herb flavor. I like the extra flavors that the savory herb stuffing mix has but the cornbread mix would work as well. To get a firmer stuffing, remove the lid of the slow cooker for the last 30 minutes.
When making the creamy sauce you can change out the cream of chicken soup for cream of mushroom soup.

Most slow cookers tend to cook differently, because of this we give the 4-5 hours on high or 6-7 hours on low cook time. My newer crock pot seems to cook faster than my older one. I recommend getting familiar with how your crockpot cooks and adjust for the recipe accordingly. Definitely make sure not to overcook the chicken or it will be dry, the internal temperature of the chicken needs to be 165℉.
