Slow Cooker Sausage and Potatoes

Slow cooker Sausage and Potatoes is a simple casserole recipe that is a cozy comfort food recipe. Making it perfect for a cooler night dinner recipe. We are looking for easy dinner ideas and this kielbasa and potatoes casserole is the perfect slow cooker meal.

Made with kielbasa sausage, fresh potatoes, onions, milk, cream of mushroom soup, and shredded cheese. This slow cooker casserole recipe is sure to be a hit at dinner. Another great sausage recipe is our Instant Pot Kielbasa and Sauerkraut Recipe.

The once raw potatoes come out fork-tender and coated in a cheesy sauce. This crockpot meal is perfect for cold winter nights. Scoop up a plateful of this drool-worthy creamy sausage and potatoes recipe when you are craving comfort food.

This slow cooker recipe is great for when you are short on time on those busy weeknights. You can let the crockpot do all the work.

Crockpot Kielbasa and Potatoes Casserole

Raw potatoes can be used in the crockpot. Just make sure that the lid to the slow cooker is on firmly so the potatoes can cook completely.

In this recipe, we will be using fresh potatoes but you could use frozen potatoes. If using frozen potatoes the cooking time will need to be adjusted.

When it comes to potatoes for meals one of my, golden rules you could say is. One potato for each person and an extra 1 for good measure. So since this recipe will serve 6 I cubed up 7 medium size potatoes.

When preparing potatoes for any recipe, I always use a vegetable peeler. I find it easier to use a vegetable peeler than a sharp knife.

When I was taught to peel potatoes as a kid, I was shown how with using a knife. A sharp knife takes away from the potato itself whereas a peeler will get the right amount of skin only off.

Cutting the potatoes into bite-sized cubes will help with the cooking time.

For the sausage in this recipe, I used the pre-cooked kielbasa sausage. However, you could use any type of sausage you like. To add a little heat to this recipe you could use a cajun andouille smoked sausage. Or to cut the calories some by using turkey sausage.

I cut the kielbasa sausage into about 1-inch chunks. Since the sausage is already pre-cooked there is no need to brown the sausage before adding it to the slow cooker for this recipe.

I ended up using two 13 ounces packages of kielbasa. We are meat eaters in our family so we like to have extra sausage in this recipe. You can easily scale that back to one package and still have plenty of meat.

I'm a total onion type of girl as well so of course, we must add onions into this dish. Dicing the onions will work as well as thin-sliced onions.

Creamy Sauce

Once the kielbasa, potatoes, and onions are chopped add them to the dish of the crockpot. I sprinkled 1 teaspoon each of salt and pepper onto the ingredients. You could mix the seasonings into the sauce as well. Now it's time to make the delicious sauce that will coat these ingredients.

Cream of mushroom soup is the base of this recipe. You totally don't taste the cream of mushroom soup though.

The soup blends so well with all the ingredients you wouldn't know it's there. Other than the few chunks of mushrooms that are in the soup. Adding milk to the recipe will help to smooth out the cream of mushroom soup.

Once you have everything in the dish of the crockpot go ahead and mix everything together. Making sure to get all the ingredients nicely coated.

Place the lid on the crockpot making sure that it's sealed well so the potatoes will cook completely. My crockpot has a locking lid.

Some say not to lock the lid while cooking because excess steam gets trapped inside the crock dish. For me, I haven't seen the difference between locking or not locking so I prefer to lock my lid.

My slow cooker only has 4 settings to it. High for 4 hours or 6 hours and low for 8 hours or 10 hours. I ended up cooking this kielbasa and potatoes casserole for 4 hours on high. You could go with 6-8 hours depending on your slow cooker.

Let's Get Cheesy

Okay, I'm a cheesy type of girl as well. I mean what better way to kick up a dish than to add cheese to it.

About 10-15 minutes before dinner add shredded cheese into the crockpot. Stir the cheese into the ingredients and then place the lid back on. The cheese kind of makes this an au gratin potato and sausage recipe. Which is totally good but you can leave the cheese out if you like. I say add that cheese and enjoy.

Some substitutions that can be made to this recipe would be. Frozen potatoes instead of fresh potatoes. You can use shredded hash browns or diced frozen potatoes. However, the cooking time will vary from this recipe.

Substitutions

There are many types of precooked sausages that you could use to replace the kielbasa that is used in this recipe. Turkey or chicken sausage would be great substitutions.

You could also use fresh sausage or ham would be another great meat substitution. But again the cooking time may vary. Like we talked about being cheesy or not to be cheesy can be your choice. We all know I'm going with the cheesy route in this recipe.

    Slow Cooker Sausage and Potatoes

    Ingredients

    • 7 Medium Sized Potatoes peeled and cubed
    • 26 Ounces Kielbasa Sauage Cut into small pieces
    • 1 Small Onion Diced
    • 10.5 Ounce Can of Cream Of Mushroom Soup
    • 1 Cup Milk
    • 1 Teaspoon Pepper
    • 1 Teaspoon Salt
    • 2 Cups Shredded Cheddar Cheese add at the last 15 minutes of cook time.

    Instructions

    1. Place the peeled and cut 1-inch cubed potatoes into a crockpot dish that has been sprayed with cooking spray.

    2. Slice the pre-cooked kielbasa sausage into smaller pieces and place into the crockpot dish with the potatoes.

    3. Dice the onion and add to the crockpot dish.

    4. Add the cream of mushroom soup and milk into the crockpot dish. Season with salt and pepper and stir all the ingredients together.

    5. Place lid on crockpot and set for 4 hours on high or 6 hours on low.

    6. 15 minutes before the cooking time is done sprinkle the shredded cheddar cheese onto the other ingredients.

    7. Once cooking time is done stir all the ingredients together and serve.

    Recipe Notes

    For the potatoes you can use frozen hash brown potatoes, however, the cooking time may change.

    I used 2-13 ounce packages of precooked Kielbasa, you can cut this back to 13 ounces if you like. As well as change the type of sausage you use.

      I tried cooking this last night, but my potatoes didnt cook and everything just turned out very watery?

        I'm sorry to hear this. One of the things I find useful when making this recipe is to make sure the fresh potatoes are diced smaller in size so they can cook fully. The milk helps thicken the cream of mushroom soup, as does the cheese. If frozen potatoes are used the cooking time will need to be increased and this could also lead to it being watery.

        You could use sour cream, cream of celery, or cream of chicken soup in replacement for the cream of mushroom soup.

      I don’t think 1 cup of milk is good in this recipe. It came out very watery and soupy and the cheese just disintegrated. I would leave that out.

        Scaling back to 1/2 cup of milk could work. I find that the cream of mushroom soup really helps to thicken this recipe up.

      In the crockpot right now. I used an Aldi brand of turkey/cheese smoked sausage links. Also used up some left over evaporated milk. Hope this makes it come out creamier. Going to make zucchini fritters to go with. It's "that" time of the year! Lol!

      I made it for my husband and I tonight for dinner. It was so nice to have dinner ready when I got off work. I thought it thickened up pretty nicely. I might’ve let it cook a little bit longer. Plus I took the lid off of it and let it for a bit. I think that helped to thicken it up but again I thought it was just right. I will make it again for sure!

      I have it in the crock pot now. I used cream of chicken because that’s what I had and threw half a package of frozen peppers in it to add flavor. Also added a bit of Cajun seasoning. May add a can of green beans at the end. I think it will turn out great.
