Discover the ultimate sweet treat with these strawberry lemon blondies. Moist blondies packed with fresh flavors from juicy strawberries and fresh lemon juice. These are then topped with a simple sweet lemon strawberry glaze. Each bite is a symphony of taste that is bursting with fresh flavor.

There are so many reasons why you will fall in love with these delicious strawberry lemon blondies that are topped with a pretty pink glaze.

The combination of strawberries with the tangy burst of lemon flavor and hints of white chocolate chips is simply irresistible. That sweet strawberry glaze of course is optional but highly recommended. It adds a little bit more sweetness to these easy strawberry blondies.

These delightful treats are sure to win your heart, you won't want to miss out on these flavor-packed delights. This lemon-flavored treat is the perfect twist to traditional blondie brownies and is a must-try this strawberry season. You may also enjoy our peanut butter brownies as well.

Ingredients Needed

All the ingredients needed to make the strawberry lemon blondies.

Let's talk about the ingredients that are needed to make these delicious strawberry lemon blondies. As well as what can be used as a replacement for this perfect summer treat.

  • unsalted butter adds flavor as well as texture to these blondies. You can substitute with either vegetable oil, regular butter, margarine, or even applesauce. Using one of these may alter the taste and texture of the blondies.
  • granulated sugar is used to sweeten these strawberry lemon brownies. Light brown sugar, honey, coconut sugar, or Stevia would be great replacements.
  • eggs act as a binder for all the ingredients as well as bring moisture to the blondies.
  • fresh lemon juice brings a fresh lemon flavor to the brownies. You can use lemon extract but I do recommend using fresh lemon juice. Lemon zest can also be added for a bit more lemon flavor.
  • all-purpose flour helps with the structure and texture of the blondies. Coconut flour, Almond flour, oat flour, or a gluten-free flour blend can be used as a replacement.
  • baking powder is one of the two leaving agents used in this recipe. It helps with the texture and pH balance in the blonde batter.
  • baking soda just like baking powder acts as a leavening agent and helps with texture and ph balance.
  • salt enhances the overall flavor of these strawberry lemon blondies.
  • fresh strawberries bring that real strawberry flavor to the blondies. Now I have used dried strawberries but definitely prefer the fresh ones.
  • white chocolate chips adds another layer of sweetness while bringing a subtle chocolate flavor to these bars.

For the glaze ingredients, you will need.

  • powdered sugar is what gives the glaze its sweetness and thickness.
  • strawberry puree gives the glaze its strawberry taste as well as the pink color. You can replace the strawberries with another fruit or omit them altogether. Strawberry jam is another replacement for the puree.
  • more fresh lemon juice gives the glaze its lemon flavor, you can use lemon or vanilla extract as well.

How To Make

To make this delicious strawberry blondie recipe start by preheating the oven to 350 degrees. Prep a baking pan by either lining it with parchment paper or spraying it with non-stick cooking spray.

Sift together the flour, baking powder, baking soda, and salt. Set this aside, in either a large bowl or the bowl of a stand mixer. Cream together the sugar and unsalted butter until light and fluffy. Add in the eggs and lemon juice mixing until combined.

Then slowly add the dry ingredients into the wet ingredients until all is added and mixed together. Then gently fold in the fresh diced strawberries and white chocolate chips.

Spread the blondie batter into the prepared baking pan, I used a 9x13 glass dish. This is a thick batter so I like using a rubber spatula to spread it out in the baking pan.

Place into the oven and bake for 40-45 minutes or until the center is done when a toothpick comes out clean. Baking time will vary depending on the oven. Allow to cool on a wire rack completely before adding the glaze.

For the glaze puree fresh strawberries in a food processor. You can strain through a fine sifter or simply mix the strawberry puree in like I did. Combine this with more fresh lemon juice and powdered sugar to create lump free glaze. Add onto the cooled blondies and allow to set before cutting into the brownies.

How To Store

Strawberry lemon bars can be stored at room temperature for 3-4 days, or up to a week in the refrigerator. You will want to make sure to either cover them with plastic wrap or place them in an airtight container.

These strawberry lemon brownies can be frozen and will last up to 2-3 months if properly stored.

The Best Strawberry Lemon Blondies

Ingredients

  • 11 Tablespoons Unsalted Butter at room temperature
  • 2 Cups Granulated Sugar
  • 2 Large Egg slightly beated
  • 2 Tablespoons Fresh Lemon Juice
  • 2 Cup All Purpose Flour
  • 1 Teaspoon Baking Powder
  • ¼ Teaspoon Baking Soda
  • 1 Teaspoon Salt
  • 1 Cup Strawberries diced
  • 1 Cup White Chocolate Chip optional

Strawberry Glaze

  • 1 - 1 ½ Cup Powdered Sugar sifted
  • 2 Tablespoon Strawberry Puree about ¼ cup of fresh berries
  • 1 Tablespoon Fresh Lemon Juice

Instructions

  1. Preheat oven to 350 degrees. Prepared baking pan by spraying with cooking spray or lining with parchment paper.

  2. Sift together the flour, baking powder, baking soda, and salt. Set aside.

  3. In a large mixing bowl or the bowl of a stand mixer cream together the butter and sugar until fluffy. Add in the slightly beaten eggs until combined.

  4. Mix in the lemon juice.

  5. Slowly add a little of the dry ingredients into the wet ingredients until al ingredients are combined.

  6. Gently fold in the diced fresh strawberries and white chocolate chips. Spread the blondie batter into the prepared baking pan. You may want to dust the cut strawberries in flour before adding them into the batter.

  7. Place into the preheated oven and bake for 40-45 minutes or until the edges are a golden brown and the center is done. You can use a toothpick to check the center for doneness.

  8. Remove from oven and place on wire rack to allow to cool.

Strawberry Glaze

  1. Puree fresh strawberries in a food processor, you can strain through a fine sifter if you like. You are looking to get 1 tablespoon of the puree.

  2. Mix together the powdered sugar, puree, and fresh lemon juice until there are no lumps.

  3. Spread on top of the cooled blondies. Allow the glaze to set up before cutting.

Recipe Notes

This batter is thick so when spreading the dough I find a rubber spatula works great.
