- unsalted butter adds flavor as well as texture to these blondies. You can substitute with either vegetable oil, regular butter, margarine, or even applesauce. Using one of these may alter the taste and texture of the blondies.
- granulated sugar is used to sweeten these strawberry lemon brownies. Light brown sugar, honey, coconut sugar, or Stevia would be great replacements.

- strawberry puree gives the glaze its strawberry taste as well as the pink color. You can replace the strawberries with another fruit or omit them altogether. Strawberry jam is another replacement for the puree.
- more fresh lemon juice gives the glaze its lemon flavor, you can use lemon or vanilla extract as well.
How To Make
To make this delicious strawberry blondie recipe start by preheating the oven to 350 degrees. Prep a baking pan by either lining it with parchment paper or spraying it with non-stick cooking spray.
Sift together the flour, baking powder, baking soda, and salt. Set this aside, in either a large bowl or the bowl of a stand mixer. Cream together the sugar and unsalted butter until light and fluffy. Add in the eggs and lemon juice mixing until combined.
Then slowly add the dry ingredients into the wet ingredients until all is added and mixed together. Then gently fold in the fresh diced strawberries and white chocolate chips.
Spread the blondie batter into the prepared baking pan, I used a 9x13 glass dish. This is a thick batter so I like using a rubber spatula to spread it out in the baking pan.
Place into the oven and bake for 40-45 minutes or until the center is done when a toothpick comes out clean. Baking time will vary depending on the oven. Allow to cool on a wire rack completely before adding the glaze.
For the glaze puree fresh strawberries in a food processor. You can strain through a fine sifter or simply mix the strawberry puree in like I did. Combine this with more fresh lemon juice and powdered sugar to create lump free glaze. Add onto the cooled blondies and allow to set before cutting into the brownies.
How To Store
Strawberry lemon bars can be stored at room temperature for 3-4 days, or up to a week in the refrigerator. You will want to make sure to either cover them with plastic wrap or place them in an airtight container.
These strawberry lemon brownies can be frozen and will last up to 2-3 months if properly stored.

- 1 Cup Strawberries diced
- 1 Cup White Chocolate Chip optional
Strawberry Glaze
- 1 - 1 ½ Cup Powdered Sugar sifted
- 2 Tablespoon Strawberry Puree about ¼ cup of fresh berries
- 1 Tablespoon Fresh Lemon Juice
Instructions

Preheat oven to 350 degrees. Prepared baking pan by spraying with cooking spray or lining with parchment paper.

Sift together the flour, baking powder, baking soda, and salt. Set aside.

In a large mixing bowl or the bowl of a stand mixer cream together the butter and sugar until fluffy. Add in the slightly beaten eggs until combined.

Mix in the lemon juice.

Slowly add a little of the dry ingredients into the wet ingredients until al ingredients are combined.

Gently fold in the diced fresh strawberries and white chocolate chips. Spread the blondie batter into the prepared baking pan. You may want to dust the cut strawberries in flour before adding them into the batter.

Place into the preheated oven and bake for 40-45 minutes or until the edges are a golden brown and the center is done. You can use a toothpick to check the center for doneness.

Puree fresh strawberries in a food processor, you can strain through a fine sifter if you like. You are looking to get 1 tablespoon of the puree.

Mix together the powdered sugar, puree, and fresh lemon juice until there are no lumps.

Spread on top of the cooled blondies. Allow the glaze to set up before cutting.
Recipe Notes
This batter is thick so when spreading the dough I find a rubber spatula works great.
