Since this recipe is made with pantry staples. You can enjoy these simple chocolate chip cookie bars with a cake mix at any time. I try to keep a well-stocked pantry so this means I have a few types of cake mixes.
Cake mix can be made into many types of desserts that are easy to make. Our cookie cake bar recipe is one of these quick dessert recipes.
These cookie bars are similar to our chocolate peanut butter chip cookies just made with fewer ingredients. Our killer fudge brownies recipe is also another rich in chocolate dessert that you may enjoy.
How To Make This Recipe
These dessert bars are made with 5 simple ingredients that you most likely have in your pantry. Making them an easy dessert to make for a quick afternoon snack.
In a large bowl whisk together a chocolate cake mix and instant chocolate pudding mix. Then add in the oil, water, and eggs. Mix all the ingredients together until all are combined.
Because we used instant pudding in this recipe the batter will be thick. If you have a stand mixer I would recommend using that to mix this recipe. I used my hand mixer which work well but the beaters were full of this batter.
The next step is to add in more chocolate. You can't have too much chocolate, right? By adding in white chocolate and semi-sweet chocolate morsels.
The delicate flavor of the white chocolate morsels complements the rich chocolate flavor from the cake and pudding mix. Where the semi-sweet morsels bring in more chocolate flavor.
With a rubber spatula fold in all the morsels until all are combined. Save that rubber spatula to spread the batter out in the baking dish.
I ended up using a devil's cake mix from Betty Crocker and a chocolate fudge instant pudding. You can use whichever type of chocolate cake and pudding you prefer.
How Long To Bake
Once you have the morsels all mixed into the batter it's time to spread it out into a baking dish. These bake up great in a 9x13 glass baking dish, if using a metal baking dish the time may vary.
Prepare the baking dish by spraying it with cooking spray. This helps the bars from sticking to the baking dish.
Add the batter into the prepared baking dish and spread it out. This batter is thick and sticky so it will take some work to get it to spread out in the baking dish. Don't be afraid to use your hands if you want.
The rubber spatula worked great for me with some sweet-talking the batter. Not really I just had to work it around a bit more than I would have with my hands.
Place the baking dish into a preheated 350℉ oven for 22-26 minutes. It did take my oven the whole 26 minutes to fully cook these bars. You can always do the toothpick test to check for doneness.
Let cool for a bit before cutting into them. We like them slightly warm with a bit of vanilla ice cream as a dessert.
