They bake up within minutes with no need to chill the cookie dough. These strawberry cookies have white chocolate morsels sprinkled into them for a bit of vanilla sweetness.
These pink chewy cookies are just as easy as our chocolate cake mix bars to make. But are perfect for Valentine's Day, a baby shower, or any special occasion that you want pink cookies for.
I love making these strawberry cookies, not only because they are easy to make but because they taste amazing. These pink cookies bake up soft and are packed full of white chocolate chips.
To make these perfect strawberry cookies with cake mix the first tip I have is to not overbake them. You want the inside of the cookies to be slightly gooey with a bit of brown color to the outside of the pink cookies. So when you see the pink to these cookies start to get brown you will want to pull them out of the oven.
To get more white chocolate flavor to these cookies add more to the top of the cookies. Once the cookies come out of the oven place them onto a cooling rack. Then add more fresh white chocolate morsels on top of each of the cookies. This will really help the pink of these strawberry cookies pop.
To change up the flavor of these cookies a bit you could change out the white chocolate morsels for milk or dark chocolate morsels. Or even leave out the chocolate chips altogether.
Whenever I make cookies I love to use a silicone liner on my baking sheets. Of course, parchment paper will work as well. Silicone liners of parchment paper will help the cookies from sticking to the baking sheet.
I also have found that it's best to bake the cookies in the middle of the oven one baking sheet at a time. This helps the airflow in the oven to circulate around the cookies so they can bake evenly.
Grab that cookie scoop to help scoop out the perfect-sized cookies. I used a 1-inch cookie scoop and was able to get 20 cookies from the batter. Leave enough space between the cookies so they can spread out some while baking.
How To Make
Making strawberry cookies is quite simple. Grab that stand mixer to make it even easier, of course, a hand mixer will work just as well. Dump the cake mix, oil, and eggs into the bowl of your stand mixer. Mix until they are combined.
Now you could bake these cookies just like this but let's add a bit of vanilla sweetness to them. By mixing white chocolate morsels into the batter. Reserve some white chocolate chips to add to the tops of the cookies once they come out of the oven.
Bake in a 350℉ oven for 10-12 minutes. Just remember that tip we shared earlier about overbaking. You want a bit of brown color to the pink of the cookies while the inside of the cookies will be slightly gooey.
Cool the strawberry cookies on a cooling rack. Push the extra white chocolate chips into the top of the freshly baked cookies to make that pink color pop more.

Strawberry Cookies With Cake Mix
Strawberry Cookies With Cake Mix are soft chewy pink cookies that are packed with white chocolate chips. Make these sweet delights for Valentine's Day, a baby shower, or any occasion where you want pink strawberry cookies.
- 15.25 Ounce Strawberry Cake Mix
- ⅓ Cup Vegetable Oil canola oil will work
- 2 Large Eggs
- 1 ½ Cup White Chocolate Chips ½ cup for after baking
Preheat the oven to 350 ℉
Into a large bowl or bowl of a stand mixer add the cake mix, oil, and eggs. Mix until all the ingredients are combined.
With a rubber spatula mix in by hand the 1 cup of white chocolate chips.
Scoop cookie dough out onto prepared baking sheets using a 1-inch cookie scoop.
Bake in the preheated 350 ℉ oven for 10-12 minutes. Or until slightly brown to the pink of the cookies and the inside looks a bit gooey.
Place on a cooling rack and add more white chocolate chips onto the cookies. This step is optional.
The batter will be thick when mixing but will make a delightful cookie.
