Toffee Blondies

Toffee Blondies are delicious brownies that are made with brown sugar and butter. Heath toffee bits are mixed into the blondies batter, melted chocolate chips coat the tops of the brownies with more toffee bits sprinkled on top of the chocolate.

This is a dessert recipe that the kids are for sure going to love. One of my favorite dessert recipes is my blondie brownies and peanut butter blondies. You may ask what is a blondie brownie?

Blondies are a sweet rich dessert bar. That has a caramel-like taste which comes from the brown sugar that is used in the recipe. Now you may be asking what are toffee blondies? Toffee blondies are blondies that have toffee bits mixed into the batter.

With chocolate chips melted and spread on top of the brownies then more toffee bits sprinkled on the chocolate. These delightful bite-size desserts are simple to make with few ingredients. This delightful recipe I came up with while I was desperately looking for something sweet to eat.

Seeing that I had a bag of Heath toffee bits and thought they would be great in my blondie recipe. One of my favorite things to do is bake, I really enjoy simple and easy recipes. This recipe is just that plus it only uses a few ingredients.

Tips For Making Toffee Blondies

Butter ~ One of the first tips for making toffee blondies is to start with room-temperature butter. Room temperature butter mixes into recipes much easier.

Normally if I know I will be baking I like to pull the butter out ahead of time. However, sometimes I forget to do this. So one trick that I use and have also seen my teenage daughter use is.

While the oven is heating up place the butter on the stovetop towards the back where it gets heat from the oven. This helps to soften the butter up quickly without melting it. You may be thinking why not melt the butter? I find that melting butter for baking recipes makes the butter lose more runny-like.

Take making cookies. Using melted butter will result in a more flatter cookie. Versus a cookie that has been made with softened butter will tend to hold a cookie shape better.

Brown Sugar ~When you measure brown sugar out you will want to make sure it is firmly packed. Packing the brown sugar will give you a more consistent measure of the sugar.

Flour ~ Sifting the flour will also add a little air into the flour making you're baked goods fluffier. Sifting also helps to mix the flour into the batter as well.

Eggs ~ Beat the eggs slightly in a small bowl before adding them into your baking recipe. Will help the eggs to mix into the batter better.

Combining The Ingredients

The first ingredients I start to combine are the butter and brown sugar. Creaming the butter and brown sugar together will help make the brownies fluffier. I then will add the slightly beaten eggs and vanilla extract in. You can use a hand mixer or a stand mixer whichever you prefer to do your mixing with.

While I'm sifting the flour I will also sift the baking soda, baking powder, and salt. Sifting these ingredients will also help to make sure there are no lumps from these ingredients.

Once the butter, brown sugar, eggs, and vanilla extract are mixed together it's time to slowly add in the sifted ingredients. What I like to do is add a little bit of the flour into the butter mixture at a time. This way I don't get a flour bath nor will there be too much flour to mix in at once. And you can make sure that all the flour gets mixed in well.

Baking The Heath Toffee Blondies

With the batter, all mixed together, add the Heath toffee bits into the batter. I do recommend stirring these in by hand that way the toffee doesn't get broken up more. I like to use a rubber spatula that way I can scrap the sides of the bowl well.

After you have the toffee bits mixed in spread the batter out into a 9x13 baking dish that you have sprayed with cooking spray. The cooking spray is so that the brownies don't stick to the baking dish. The batter will be a little sticky so it will take a little work to get the batter spread out evenly.

Place the baking dish into a preheated 350℉ oven for 30 minutes or until done. Poke a toothpick in the center of the brownies, if the toothpick comes out clean they are done.

As soon as the brownies are completely baked sprinkle chocolate chips over the top of the toffee blondies. With the oven off place the baking dish back into the oven for 5 minutes.

This will help melt the chocolate to make it easier to spread. I used an offset metal spatula to spread the melted chocolate chips evenly over the blondies.

Once the melted chocolate is spread evenly sprinkle the top of the brownies with the Heath toffee bits. Since I used a glass baking dish I let my brownies cool slightly out on the countertop.

Once I felt the baking dish was cool enough I place the dish into the refrigerator to set the chocolate up. This took about 30 minutes to get the chocolate set up in the fridge.

Cut and serve these fabulous toffee blondies. These make for a great snack any time of the day.

I do recommend that they get covered with saran wrap or in an airtight container so they don'tdry out.

Toffee Blondies

Ingredients

  • 2 Cups Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Salt
  • 2 Large Eggs Slightly beaten
  • 2 Cups Brown Sugar Firmly packed
  • ⅔ Cup Butter Room Temperature
  • 1 Teaspoon Vanilla Extract
  • 1 Cup Heath Toffee Bits
  • 1 ½ Cups Chocolate morsels
  • ¾ Cup Heath Toffee Bits

Instructions

  1. Preheat oven to 350℉

  2. Sift together the flour, baking powder, baking soda, salt in a bowl. Set aside.

  3. In a small bowl slightly beat the eggs, set side.

  4. Cream together the butter and brown sugar.

  5. Add the slightly beaten eggs and vanilla extract into the butter mixture

  6. Slowly add the sifted flour mixture into the creamed butter mixture. Add a little at a time until all the flour is incorporated.

  7. Stir in 1 cup of toffee bit into the batter.

  8. Spread the batter into a 9x13 baking dish that has been sprayed with baking spray.

  9. Place into the preheated 350℉ oven. Bake for 30 minutes or until done. Sprinkle the chocolate morsels on top of the brownies. Place back into the oven for 5 minutes making sure the oven is off. You just want the heat from the oven to melt the chocolate.

  10. After the 5 minutes remove from oven and spread the melted chocolate. Covering the whole top of the brownies.

  11. Sprinkle with the ¾ cup of toffee bits. Let cool on the countertop until baking dish is cool enough to go into the fridge.

  12. Place the baking dish in the refrigerator for 30 minutes or until chocolate has set up.

  13. Cut and serve.

Recipe Notes

For the butter I did use salted butter.

I also baked this recipe in a glass baking dish. The time may vary depending on baking dish.
