Parmesan chicken with mayo is mouth-watering and the moistest chicken recipe you will ever eat. A creamy dressing made with mayonnaise is coated onto thinly sliced chicken breast then baked to golden perfection.

Baked parmesan chicken is sure to become your go dinner any night of the week.

Chicken is one of my favorite meats to make especially chicken breast. However, my family gets tired of it being made the same way all the time. So I like to come up with easy chicken recipes that my family will love.

This one has quickly become one of my top go-to's, it's almost right up there with our Chicken Feta Pasta recipe. Come along as I show you step by step how I make this simple recipe.

Parmesan Chicken Ingredeints

We will start talking about the chicken that is used in the recipe. One of the things that I have noticed is how thick chicken breasts seem to be anymore.

The thick chicken breast not only can be tough they seem to take so much longer to bake. I have found that thin-cut chicken breast will work the best, especially for this recipe.

Many stores sell thin-sliced breasts but the cost is higher than full-sized breasts. My solution for saving a bit of money is I slice the chicken breast in half myself.

To make the dressing we start with mayonnaise. Mayo brings a creaminess that we are after in this recipe.

I'm sure you could use Miracle Whip. Miracle Whip is made with more sugar than mayo making it sweeter. For this reason, alone I would recommend using mayo.

Let's be cheesy, no really let's just take a minute to talk about cheese. Using fresh parmesan cheese will bring more parmesan flavor than the grated stuff you get in a can. Adding mozzarella cheese into the dressing will add more of a depth of flavor.

The spices I kept simple with salt (I used pink Himalayan salt), pepper, Italian seasoning, and minced garlic.

On To Making The Recipe

To start making the parmesan chicken with mayo we first need to slice those breasts. That is unless you bought thin sliced breasts.

If you are using full-size chicken breast I do recommend slicing them horizontally.

To slice the breast I place my hand on top of the chicken and run a sharp knife along the middle of the breast cutting it in half. This will give you two equal sizes.

The next step is to season both sides of the chicken with the salt, pepper, and Italian seasoning. I like to mix these seasoning together in a bowl but you can just sprinkle each seasoning on by itself.

Our next step is to add the mayo, mozzarella cheese, parmesan cheese, and minced garlic into a bowl. Mix these ingredients together until all are combined.

To make this a bit healthier you could substitute non fat yogurt for the mayo.

If you are not a garlic fan then you can leave it out, or if you don't have fresh or jarred garlic (as I used). You could replace the minced garlic with garlic powder.

Place those thin sliced breasts into a baking dish that has been sprayed with cooking spray. Then top each of the breasts with the mayo dressing mixture spreading it out evenly on each breast.

As the baked parmesan chicken with mayo cooks, it becomes juicy from the mayo mixture.

If you would like a bit of crunch to your parmesan chicken, then you could add into the mayo mixture bread crumbs or panko.

Place the baking dish uncovered into a preheat 375℉ oven and bake for 40-45 minutes.

Or until the chicken is no longer pink in the middle. If you were to cover the baking dish with foil the chicken wouldn't become golden brown.

The mozzarella and parmesan cheese melt together with the mayo becoming golden brown color. The mayo and cheese dressing will become bubbly and forms a nice crust on top of the chicken.

What To Serve With

Once the parmesan chicken with mayo is ready to be baked to golden perfection. You may be wondering what to serve with it.

As you can see in the picture I served mashed potatoes and fresh steamed broccoli. You could also serve this chicken with rice, pasta, or even a salad. Our Instant Pot Acorn Squash recipe would complement this recipe nicely.

Parmesan Chicken With Mayo

Ingredients

  • 4 large Boneless Chicken Breast thinly sliced
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1 Teaspoon Italian Seasoning
  • 1 Cup Mayonnaise
  • ½ Cup Parmesan Cheese freshly shredded
  • 1 Cup Mozzarella Cheese
  • 2 Teaspoon Garlic minced

Instructions

  1. Preheat oven to 375℉, spray a baking dish with cooking spray , and set aside.

  2. In a small bowl mix together the salt, pepper, and Italian seasoning. Set aside.

  3. Cut chicken in half the long way to make it into thin pieces if need to. Place chicken breast in the prepared baking dish.

  4. Sprinkle the seasoning mixture on both sides of the chicken breast.

  5. In a large bowl mix together the mayo, mozzarella cheese, parmesan cheese, and minced garlic.

  6. Place mayo mixture on top of the seasoned chicken breast until evenly coating each breast.

  7. Place into the preheat 375℉ oven for 40-45 minutes or until no longer pink in the middle. The chicken will become a bubbly golden brown. Serve and enjoy.
